Peach 'n Greens Salad


This is the perfect summer salad for two. It’s light, refreshing and oh, so flavorful! The peach combined with the fresh herbs make it taste like summer in a bowl. Enjoy as a side or make into a complete meal by plating with shredded chicken or 1/2 avocado (vegan / vegetarian option).


1 organic yellow or white peach, sliced
3/4 cup sugar snap peas, sliced length-wise
1 cup organic cherry tomatoes, sliced in half
1/4 head of raddichio, thinly sliced
Handful of pea shoots
Parsley, to garnish
Mint, to garnish
Dash of sea salt
Cracked pepper
Dollop of Almond Ricotta (try this one by Kite Hill)
Extra virgin olive oil
Balsamic pepper


Toss all the ingredients together, drizzle with olive oil and balsamic and serve immediately.
